UXU Dinner Rolls

Oh, oh, oh, I thought I had lost this forever and was so sad. It’s Randall’s favorite and he always wants me to do dinner rolls at Thanksgiving but today, diving into old files, looking for old poetry, I FOUND IT! Huzzah.

UXU Dinner Rolls

2 - 2 1/2 c unsifted flour
2T sugar
1/2 t salt
1 pkg active dry yeast
1/4 c water
2 t butter

Mix 3/4 c flour with sugar, salt, and yeast. Heat milk, water, and butter to 125°-130°. Gradually add dry ingredients and beat 2 minutes at medium speed. Stir in enough flour to form a soft dough. Knead on a floured board 2-3 minutes. Divide into 12 pieces and shape into balls. Put in greased 8” round pan. Pour 1” of boiling water into a pan on bottom rack of a cold oven and let dough rise 30 minutes, covered. Uncover, remove water, and bake at 375° for 20-25 minutes.

This was the recipe I was given by Dick Jones, my boss at the UXU ranch during the summer of 1983. They are the best dinner rolls I’ve ever eaten.
